I got assigned to make dessert that will be auctioned off. Having just eaten a Tiramisu, I thought about making one for the assignment. But, it was supposed to represent the restaurant. I wanted to feature our beers and so in a stroke of inspiration scoped the internet for recipes and after some tweaking, here we are! Enjoy!
{Traditionally, Tiramisu, “pick me up” is made of lady fingers dipped in coffee flavored with amaretto or coffee liqueur and mascarpone cheese.}
Ingredients
- 1 cup St. John’s Stout
- ¾ cup espresso or strong coffee
- 30 – 40 pcs savoiardi or lady fingers
- 3 cups (24 oz) full fat cream cheese, softened
- 1 ½ cup + ½ cup heavy cream
- 2 T vanilla extract
- 2 cup icing sugar
- Cocoa powder, as needed
In a mixing bowl, whip 1 ½ cup heavy cream to stiff peaks. Keep cold and set aside.
In another mixing bowl, whip cream cheese, remaining heavy cream, vanilla extract, and sugar. Fold in whipped cream. Put in a piping bag. Set aside.
Pour beer and coffee in a squeeze bottle and shake to combine. Traditionally, you would use a small bowl and dip the lady fingers in the coffee/beer mixture. I just think that using a squeeze bottle prevents the lady fingers from being too soggy.
Assembly
In a 10 inch spring form cake pan, line the bottom with lady fingers. Squeeze beer/coffee mixture over. Pipe cream cheese mixture and smooth with using a small spatula. Repeat with one more layer of lady fingers. Cover and chill for at least 2 hours.
When ready, remove cake from pan. Line sides with more lady fingers. Dust with cocoa powder. Serve.
